Ingredients:

  • 12 ounces uncooked angel hair pasta
  • 3 tablespoons butter or margarine
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups milk
  • 1/4 cup grated Parmesan cheese
  • 1-1/2 cups finely chopped fresh spinach or 1 package (10 ounces) frozen chopped spinach, thawed and drained

Directions:

Cook the pasta according to package directions. Meanwhile, in a saucepan, melt butter over medium heat. Stir in the flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; stir in Parmesan cheese until melted. Stir in spinach. Drain pasta and transfer to a serving bowl. Pour sauce over pasta and toss to coat. Yield: 8 servings.
