S’mores are one of those special treats that aren’t made often enough, most likely because many of us don’t sit around a campfire very often. This mini s’mores recipes helps solve that problem, recreating the classic s’mores flavor, without a campfire or any flame necessary.

Melted chocolate chips and a dipping chocolate take the place of a chocolate bar. And you won’t even miss the original campfire s’mores after making this mini version, which you can treat yourself to anytime indoors. No smoky odor in your clothing, no mosquitoes—and no chance of accidentally burning the marshmallows!

Ingredients for Mini S’mores

  • Milk chocolate chips: The milk chocolate pairs with the whipping cream, melting into a delicious chocolaty spread inside the s’mores.
  • Heavy whipping cream: The whipping cream helps turn the chocolate chips into spreadable chocolate.
  • Graham crackers: The crackers contribute to the flavor of the s’mores, plus give them a solid structure. Before you get started, break the graham crackers into quarters along the perforated lines—and do this for an entire box of graham crackers.
  • Marshmallow creme: The marshmallow creme takes the place of actual marshmallows used in traditional s’mores made over a campfire. Using it also eliminates the need for a flame.
  • Milk chocolate for dipping: The dipping chocolate brings even more chocolate flavor to the s’mores and gives them a touch of elegance in their appearance.

Directions

Step 1: Melt the chocolate

Place the chocolate chips in a small bowl. In a small saucepan, bring the heavy cream just to a boil. Pour the cream over the chocolate, then stir with a whisk until the mixture is smooth. Allow the mixture to cool to room temperature or until it reaches a spreading consistency, about 10 minutes.

Step 2: Spread the chocolate and marshmallow

Spread the chocolate mixture over half the quartered graham crackers. Spread marshmallow creme over the remaining graham crackers.

Step 3: Make the “sandwiches”

Place the marshmallow sides and the chocolate sides together, like a sandwich, pressing to adhere.

Step 4: Dip the s’mores in chocolate

Melt the dipping chocolate according to the package directions. Dip each s’more halfway into the chocolate, allowing the excess to drip off. Place the dipped s’mores on waxed-paper-lined baking sheets, and let them stand until the chocolate is set.

Mini S’mores Variations

  • Use cinnamon grahams: Cinnamon graham crackers feature a light coating of cinnamon and sugar for added flavor. Use these in place of the usual graham crackers for a note of sweetened cinnamon.
  • Cookie time: Use cookies in place of graham crackers. Square or rectangular shortbread cookies work well for making these mini s’mores; vanilla wafers are another good choice.
  • Add peanut butter: Spread peanut butter on half the graham crackers before adding the chocolate for a tasty flavor combination that’s somewhat unique. (Alternatively, mix 2 tablespoons of peanut butter into the marshmallow creme before spreading it onto the graham crackers.) Other nut butters such as almond butter or cashew butter can be used in place of peanut butter.

How to Store Mini S’mores

Place the mini s’mores in an airtight container in the refrigerator, where they’ll keep for five days or so. Some graham crackers get a bit soft with the chocolate and the marshmallow creme between them, so it’s best to consume these within a  couple days.

Can you freeze mini s’mores bites?

Yes, and freezing them helps keep them firm too. Place them in an airtight container and pop that into the freezer. Mini s’mores will keep for a couple months if frozen. To enjoy them, thaw them in the fridge for a few hours or on the counter for 30 minutes or so. Ideally, don’t let them get to room temperature, or they may be messy.

Mini S’mores Tips

Can I use dark chocolate instead?

Absolutely! Dark or bittersweet chocolate makes the chocolate stand out flavor-wise, without the milky aftertaste that some milk chocolate creates.

Could I decorate these a bit?

I can’t find heavy whipping cream. What can I use instead?

Heavy whipping cream is the same thing as heavy cream; sometimes, it’s just a matter of branding by the manufacturer. Both types of heavy cream contain a minimum of 36% milkfat. If you can’t find either version, regular whipping cream, which has slightly less milkfat, will work as an ample substitute in this recipe.
