This delightful, and delightfully simple, pork and rice dish consists of layers of onions, peppers, tomatoes, seasonings and smoky pieces of meat, baked together to create fluffy and caramelized bites.

No matter the season, there’s little more comforting for dinner than a hearty scoop of pork and rice. This recipe relies on fragrant onions, peppers and tomatoes as the base. Then we add grains and smoky meat to the skillet, pour in some chicken broth and let it boil together. Instead of finishing this dish on the stovetop, we transfer it to the oven, where the edges will crisp up and caramelize while the center remains light and fluffy. You can eat pork and rice on its own as a meal or serve it alongside grilled vegetables and salad to balance things out.

Pork and Rice Ingredients

  • Veggies: We start by sauteing onions and green peppers, then stir in canned diced tomatoes to make the base of this pork and rice recipe.
  • Butter: Using butter to saute the vegetables adds richness and flavor.
  • Chicken broth: Instead of water, we pour chicken broth into the pot so the rice can soak up a flavorful liquid.
  • Pork: The cubed pork infuses smoky and salty notes into this rice dish.
  • Rice: We prefer using uncooked instant rice because it cooks quickly.
  • Lime and cilantro (optional): Lime wedges and minced cilantro aren’t integral to the recipe, but they make a nice finishing touch on the plate.

Directions

Step 1: Combine the ingredients

In a large skillet, saute the green pepper and onion in the butter until tender. Stir in the tomatoes, broth, salt and pepper. Bring the mixture to a boil, then stir in the pork and rice.

Step 2: Bake the rice

Preheat the oven to 350°F. Transfer the rice to a greased 2-quart baking dish. Cover the dish and bake it until the rice is tender and the liquid is absorbed, 20 to 25 minutes.

Step 3: Garnish and serve

Before serving, give it a stir, and garnish each serving with a wedge of lime and a sprinkle of minced cilantro, if desired.

  • Add legumes: This pork and rice dish would be delicious with pigeon peas or black beans added in.

Ingredients

  • 1 medium green pepper, chopped
  • 1 small onion, chopped
  • 2 tablespoons butter
  • 1 can (14-1/2 ounces) diced tomatoes, drained
  • 1 cup chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-3/4 cups cubed cooked pork
  • 1 cup uncooked instant rice
  • Optional: Lime wedges and minced cilantro

Directions

  1. In a large skillet, saute green pepper and onion in butter until tender. Stir in the tomatoes, broth, salt and pepper. Bring to a boil; stir in pork and rice.
  2. Transfer to a greased 2-qt. baking dish. Cover and bake at 350° until rice is tender and liquid is absorbed, 20-25 minutes. Stir before serving. If desired, serve with lime wedges and top with minced cilantro.
