Cook the pasta according to the package directions. Drain the pasta and transfer it to a large bowl. Next, stir in the tomatoes, onion, salami, provolone, red pepper, parsley and olives.

In a small bowl, whisk together the red wine vinegar, Parmesan, mustard, garlic, oregano, salt and pepper. Slowly drizzle in the olive oil and whisk until combined.

  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped red onion
  • 1/2 cup cubed salami
  • 1/3 cup cubed provolone cheese
  • 1/4 cup chopped sweet red pepper
  • 1/4 cup minced fresh parsley
  • 1 can (2-1/4 ounces) sliced ripe olives, drained
  • DRESSING:
  • 1/4 cup red wine vinegar
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves, minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup olive oil
