  • Vanilla extract: The teaspoon of vanilla extract balances out the chocolate flavor, and works well with the nuts.
  • Chopped pecans: Use 1 and 1/2 cups of chopped pecans that have been cut into relatively uniform size.

Directions

Step 1: Prepare the pan

Line a 13×9-in. baking dish with waxed paper.

Step 2: Melt the Velveeta and chocolate

Place the Velveeta, butter and chocolate in a large microwave-safe bowl. Microwave it in 30 second increments, stirring in between, until both ingredients have melted.

Step 3: Mix the fudge

While beating with a hand mixer on low, slowly add the confectioners’ sugar to the chocolate mixture until the sugar has fully incorporated, 2 to 3 minutes. Then beat in the vanilla extract and fold in the pecans.

Step 4: Chill and cut

Transfer the fudge mixture to the prepared baking dish, and smooth it into an even layer. Then, cover and refrigerate the fudge for at least 4 hours. Once set, cut it into 1-inch squares.
