This easy recipe requires sweet potatoes, a good knife, some seasonings and an oven. These flavorful and nutritious sweet potato crispy chips are the perfect snack for when the kids come home from school or when you have a case of the late-afternoon munchies. Ingredients for Sweet Potato Chips

  • Sweet potatoes: The orange flesh of sweet potatoes is an excellent source of vitamins and fiber. These versatile root vegetables are great for a variety of recipes, including pies, soups and, of course, chips! For this sweet potato crispy chips recipe, you will need two medium-sized sweet potatoes (not yams!).
  • Cooking spray: A light coat of cooking spray is all you need to bake these sweet potato chips in the oven.
  • Seasonings: These sweet potato crispy chips are simply seasoned with dried herbs, including rosemary and parsley, garlic salt, paprika, ground mustard and white pepper.

Directions

Step 1: Prep the potatoes

Preheat the oven to 400°F. Cut the peeled sweet potatoes into 1/8-inch slices. Spray both sides of the sweet potato slices with cooking spray.

Editor’s Tip: You can also leave the peels on the sweet potatoes! The peels are full of nutrients and antioxidants.

Step 2: Season the potatoes

In a large bowl, mix the rosemary, parsley, garlic salt, paprika, ground mustard and white pepper. Add the potatoes and toss gently to coat.

Step 3: Bake the potato chips

Arrange the sweet potato slices in a single layer on two 15x10x1-inch baking pans coated with cooking spray. Bake the sweet potato chips in the oven, uncovered, until golden brown and tender, turning several times, for 20 to 25 minutes.

  • Keep it simple: Although our recipe calls for several herbs and spices, you could also make more classic baked sweet potato crispy chips by skipping the seasonings and sprinkling them with coarse sea salt.
