Potlucks and picnics were made for crowd-friendly heaps of pasta and potato salads. But when you’re cooking at home and looking for a light dish to pair with all your grilled meats, turn to your farmers market haul.

Cucumber salads are garden fresh and full of nutrients. The crisp green fruit (that’s right, not a vegetable) is incredibly mild in flavor, making it perfect for tossing with all sorts of seasonal summer produce. Tomatoes, onions, grains and various types of herbs and spices bring out the best in juicy cucumbers. And their faintly sweet flavors make them ideal for quick pickling.

When shopping for cucumbers or harvesting them yourself, look for firm cukes with uniform medium to dark skin. Avoid any that are wrinkled, have soft spots or are starting to yellow. If they feel unusually heavy or thick-skinned, that usually indicates that they are past their prime and will taste bitter.

Wash the winners in cool water, dry with a towel, and make sure you store them properly. You can also cut and store cucumber slices in an airtight container filled with water for up to three days before you use them. This way, you won’t have dehydrated slices when you’re ready to prep your salads!

Different types of onions and other garden veggies are popular ingredients in cucumber salads. Basically, most ingredients you’d add to a crudités platter would work in a salad with cucumbers. Fresh herbs like dill, tarragon and basil add welcome aromatics to the salads too, since cucumbers themselves don’t have much flavor. A standout dressing brings everything together. Vinegar and oil or a mayo-based dressing are both tasty options since the crisp salads can withstand lighter and heavier ingredients.

How do you keep cucumber salad from getting watery?

It’s all in the prep. Cucumbers are about 96% water, so removing excess moisture is essential. One way to prevent soggy salads is to cut your cucumbers in half lengthwise and then scoop out the seeds with a spoon. Doing so leaves you with only the firm flesh to slice. Lightly salting cucumber slices for 20 minutes prior to using them is another method. The salt draws out excess moisture that can be collected by lightly blotting the slices with a paper towel or draining in a colander.

How do you store leftover cucumber salad?
