This week, I made Creamy White Chicken Chili, which I top generously with diced avocados—as I do with every southwestern soup. Even as I was pulling the seasonings from my spice storage to doctor up my chili, all I was really thinking about was the fresh, creamy green garnish to come.

Although I do place a heaping handful atop each bowl, I still use only about half of an avocado. So, the other half, of course, went into my trusty new avocado keeper for use the next night.

The lid slid into the base very snugly, which made me feel confident in the keeper’s purported airtightness. Then, I stored it in my refrigerator for the next 18 hours. When I pulled it out, the lid had collected a bit of condensation, so I was delighted to see that my avocado had minimally browned.
