Ingredients for Copycat Starbucks Egg Bites

  • Eggs: Choosing the best eggs to buy can be confusing. There are so many options! Getting fresh eggs from the farmer’s market is the best choice but it’s not always feasible, so try a dozen organic eggs. When we compared regular and organic eggs, the latter was the winner when scrambled.
  • Cottage cheese: Cottage cheese is good for you, since it adds protein and keeps things low-carb. Here, it gives our egg bites texture. We recommend 4% milk for a little more creaminess.
  • Seasoning: A dash of salt and pepper makes the other ingredients more flavorful. Try a pepper grinder that pairs form and function for a coarser-textured pepper.
  • Swiss cheese: Mild with a touch of sweetness, Swiss cheese has low acidity, low salt content and high elasticity, making it perfect for our Starbucks egg bite copycat recipe.
  • Bacon strips: There are quite a few types of bacon. This recipe only calls for three strips, so it’s an excellent way to use leftover bacon from the weekend. However, a microwave or an air fryer might be the best ways to cook bacon if you need it on the fly.

Directions

Step 1: Set up and preheat the oven

Arrange an oven rack at the lowest rack setting, then place a second rack on the middle level of the oven. Place an oven-safe skillet on the bottom oven rack and preheat the oven and skillet to 300°F. Meanwhile, bring 2 cups of water to a boil.

Step 2: Blend the eggs and cottage cheese

In a blender, puree the eggs, cottage cheese, salt and pepper until smooth, about 20 seconds.

Editor’s Tip: If you don’t want to use a blender, a hand mixer or a whisk and some elbow grease will do.

Step 3: Add the mix-ins

Line six muffin cups with foil liners, divide the Swiss cheese and bacon among them and pour the egg mixture over the top.

Editor’s Tip: Silicone egg or muffin molds are great for making egg bites in the oven; just spritz them with cooking spray and forget the liners.

Step 4: Steam the egg bites

Wearing oven mitts, place your muffin tin on the top rack. Pull the bottom rack out 6 to 8 inches and add boiling water to the skillet. (Work quickly and carefully, pouring water away from you. Don’t worry if there’s some water left in the saucepan.) Carefully slide the bottom rack back into place and quickly close the door to trap the steam in the oven.

Editor’s Tip: The steam helps the eggs cook up nice and fluffy. While you can skip the water step, it adds the softest texture to baked egg bites.

Step 5: Bake and serve

Bake until the eggs puff and are cooked to your desired degree of doneness, 25 to 30 minutes. Serve them immediately.

Recipe Variations

  • Protein possibilities: Instead of bacon, try adding diced ham or lardons. Or maybe turkey bacon or vegan bacon is more your speed. Chicken sausage? Sure! Just follow the recipe amounts so the egg bites bake the same.
  • Vegetables, A to Z: Whether it’s asparagus or zucchini, a few pieces of diced veggies in each bite add flavor and nutrition. Try spinach, peppers, broccoli or whatever you picked up at the farmer’s market this week.
  • Switch up the Swiss: Many good melting cheeses like Gruyere, fontina and pepper jack also taste terrific in this recipe.
  • Spice it up: When adding the salt and pepper, experiment with other herbs and spices, such as oregano, garlic powder, basil, chives or even a dash of cayenne pepper.
