Sometimes all you need is a simple sheet pan dinner to get you by for a weeknight and this andouille sausage and peppers recipe is just that. It’s simple with tasty ingredients and flavored with a Creole seasoning. You don’t have to worry about using too many ingredients. Ingredients for Andouille Sausage and Peppers

  • Potatoes: This recipe calls for 1 pound, about 2 medium potatoes. Our favorite types of potatoes to use include Yukon gold and red potatoes.
  • Andouille chicken sausage: Choose any flavor you desire. This recipe will work for them all!
  • Red onion: This adds aromatic flavor to this savory and hearty meal.
  • Red and green bell peppers: Works as a nice contrast to the red onion, making this sheet pan sausage and peppers almost like a breakfast hash.
  • Pepper rings: Gives this recipe a slight tang thanks to the pickled pepper rings.

Directions

Step 1: Toss the ingredients together

Preheat the oven to 400°F. Meanwhile, in a large bowl combine the potatoes, sausage, onion, red pepper, green pepper and pepper rings. In a smaller bowl, mix together the oil, Creole seasoning and the pepper. Drizzle it over the potato mixture and toss everything to coat.

Step 2: Roast in the oven

Coat a 15x10x1-inch baking pan with cooking spray and then transfer the mixture. Roast until the vegetables become tender, stirring occasionally; about 30 to 35 minutes.

  • Use different sausages: While our recipe calls for using an andouille chicken sausage, feel free to use a different sausage that you prefer — or simply the one you have on hand! This recipe would also work with sausage varieties such as Italian and Kielbasa.

Andouille sausage and peppers will last in the fridge in an airtight container or a zip-top bag for up to four days. You can reheat it either in the microwave or in the oven at 350° until the sausage is warmed through; about 10 to 15 minutes.

Yes! Cooked andouille sausage and peppers can freeze. Place them in a airtight freezer-safe container as soon as the dish reaches room temperature and place them in the freezer. They should last up to three months.

Can I cook the whole sausage for andouille sausage and peppers?

While our recipe calls  for slicing the peppers before cooking, you can roast the whole sausage on the pan with the potatoes, peppers and onions. However, the sausage might take a bit longer to cook, so keep that in mind. You could also slice the sausages in half lengthwise so they cook faster but still have that full sausage shape.

Do you peel the casing off andouille sausage?

No, you do not need to remove the casing for your andouille sausage. The sausage is already precooked in the casing, which is safe to eat. It is there to keep the sausage shape in-tact and makes it easier to slice up for this andouille sausage and peppers recipe.

What is the difference between andouille and chicken andouille sausage?

Chicken andouille sausage tends to have a mild flavor compared to regular andouille sausage, which can be spicier and sometimes smokier, depending on how it was made. Choose the andouille sausage you want based on your taste preference!

Spicy Roasted Sausage, Potatoes and Peppers

Ingredients

  • 1 pound potatoes (about 2 medium), peeled and cut into 1/2-inch cubes
  • 1 package (12 ounces) fully cooked andouille chicken sausage links or flavor of your choice, cut into 1-inch pieces
  • 1 medium red onion, cut into wedges
  • 1 medium sweet red pepper, cut into 1-inch pieces
  • 1 medium green pepper, cut into 1-inch pieces
  • 1/2 cup pickled pepper rings
  • 1 tablespoon olive oil
  • 1/2 to 1 teaspoon Creole seasoning
  • 1/4 teaspoon pepper

Directions

  1. Preheat oven to 400°. In a large bowl, combine potatoes, sausage, onion, red pepper, green pepper and pepper rings. Mix oil, Creole seasoning and pepper; drizzle over potato mixture and toss to coat.
